Get an ice cream maker and make the the first batch while spending the day with mom. Machines can be found in many local retailers and some models are well under $50.

It does not have to be cutting edge tech. A watch is classic gadget. What better gift can help you reaffirm your commitment to spending more time with mom. There are many affordable options.
